Knowing how to interview and select the right bartender for your clientele is essential to the success of the enterprise. "Obviously, we're talking about things like punctuality, dependability and honesty here," Johnson says, "but the primary ingredient is that the bartender needs a vibrant personality." "It's unfortunate," says the beverage doc, "that a few bad apples in our industry so often give the profession a bad name. Our course describes exactly how some bartenders steal from the bar owners, and what you can do about it."

What are the key skills that you should teach your bar personnel? "Let's talk about cleanliness, appearance, quality service, but also using proper techniques and doing things right when it comes to making and serving drinks. In many instances, we're serving the drink improperly." Johnson says the biggest mistake made by bar managers is their failure to "work on keeping up with the inventory every single day." This require only 20-30 minutes a day as a rule. "Our course is loaded with tips on how you can organize inventory in order to control it with a minimum of time and energy."

Bob Johnson, CBM, former professor of bar management at Florida International University, Miami, FL, has worked in over 400 nightclubs and bars in his career and continues to draw most of his teaching skills from everyday experiences as an operations consultant to the industry. Mr. Johnson has published 11 books on bartending and bar management, including Controlling Bar Costs, Bartender Theft (Revealed and Analyzed), Running a Successful Bar, and his most recent The Disgusting Practice of Bartender Theft (see our Bookstore). Bob Johnson also writes monthly articles for beverage magazines nationwide and is a featured speaker at beverage trade shows and conventions.
